I am new to RapidWeaver and just trying to do a simple personal website. How do I change the background image without having to use one of the built-in themes?

RapidWeaver requires you to use a theme of some kind. You can’t have a no theme site.
There are a few “blank” themes available. They don’t have much on them.

how you change the background image depends on the theme and/or type of page you are using.
