When I insert an image in a Stacks page, I drag it into the page from the Finder, and it seems to work well. However, when I publish the page, is that all I would need to do, or do I need to also upload the image file as well and store it somewhere on the web server?

That is all that you need to do. RapidWeaver will publish the images for you.
