So I have Bought the Pro plan for almost one year ago and my license is about to expire, my question is if when it expires I will be able to continue using elements but without been able to update, or I wont be able to use it at all?
Sure, elements will continue to work as you licensed it, but you will not be able to receive updates.

Yes! You can continue to use Elements, you just won’t receive updates
