The thumbnail isn’t showing when I add a YouTube video to the video component. Adding an image and setting it as the thumbnail doesn’t work either.

Try restarting both Elements and your Mac to see if that clears things up.
YouTube thumbnails are working here on my end:
If you are still having troubles with it after the restart, can you share your project file here with us so we can test it out?
