Hi,
I had already created a simple site with help of the Get Started video.
The background color of the site was light coloured but after the update today it got dark.
Another site has the same issue.
How can this be solved?

Have you switched to Dark Mode maybe?
Changing Colours based on Mode
Every colour in Elements supports Dark and Light Mode, this means you can change the colour of text, backgrounds, buttons, borders, and more, all based on the users system settings.
By default when you set a colour it’s set for Light Mode. To set an alternative colour for Dark mode, you need to press the Dark/Light Mode toggle button at the top of the editor.
Here’s a quick run down on what might be going on, and how to fix it 
It seems Display mode was set to Automatic so it changed all the system colours and therefore also the site colours.
