I have two collections on a page that are each set to load three items per page. When I preview, I see the Load More button, but when I click on it, the button disappears, the page redraws, and no additional items are displayed. This happens in both collections on the page.
What am I doing wrong?
Hard to say without seeing the project 
Can you share a sample project, ideally just the page?
I’ve just re-tested the demo project that shipped alongside 1.1.1 and it appears to be working fine, so maybe you just have a slight config error…
This is really weird. Inside the project where I was initially testing this it clearly does not work. But when I move just that page out into a new project, it works just fine.
So I’m going to send the project that is not working properly even though there is a lot of other stuff going on in that project. I will DM it to you.

I think this is an issue with Collections being in sub-pages or sub-folder (so not at the root of the domain).
In my testing it seems to work if the Collection is on the homepage, but not when on a sub page.
I’m going to need to dig in to this further — apologies for the bug, I’ll get this one fixed as soon as possible 
I can confirm your findings, the Load More button works just fine when on the home page, but not on any other page.
And so do I. I’ve got the same findings too. Load More works fine if the collection is on the home page, but not of it’s on another page.

Quick update: Load More is now working inside sub folder — the fix will be included in the next update
