So I understand that the text component fields do not inherit theme styling - is that correct?
So I need to change all of them into typography component fields or markdown component fields

A little confused - some ‘text’ component fields are not changing color - why? Thinking - I may have overridden the default and choose a color?

It is very helpful to change themes and see what changes. Text color will change.
