The Marketplace offers - amoungst other things - Themes and Projects.
I am used to Themes, but I do not know what a Project is. When I demo the Projects, they seem to be no more than a Theme.

A theme consists of a preprogrammed look and feel that can be applied to the various page types that RapidWeaver comes with (Styled Text, Blog, etc.). Applying a theme instantly changes the look and feel of your entire website, without you changing the content itself.
A project is a collection of pre-built pages, usually including some nifty custom features, that you can fill out using your own content. They do not apply to other RapidWeaver pagetypes and usually require the Stacks plugin, and sometimes additional plugins like Foundation or Foundry.
