I’d like to create a table with these two features, variable column widths, and variable cell background colours - as in the attached example.

you can set the width of the columns in the Settings group and use striped background colour to have alternating rows.
Hopefully that’s what you’re after, but do let us know if you need more help

This didn’t really help. I’ve managed to create different column widths by using tables with only one column inside containers and designating each container as a grid item So in a five column grid the first and last containers are one column wide and the middle one is three wide.
I still don’t know how I can mark individual cells to match a colour key (as in my screenshot at the top of this thread). I need set either the background colour or the text colour on an individual basis.
If you’re using the Table Component you can switch a cell to support drop zones, this allows you to put anything inside of it, that way you could style it however you like.
You need to be running Elements 3, once you update to the beta you’ll get all the new features
