The options will be greyed out until you OVERRIDE the font you want to change. Right-click on the font you want to override (body, for example), and a pop-up will be displayed asking you if you want to override it. Select it, and then you can set a font for the body. Repeat for heading if you also want to change it.

You can also use your own fonts; they don’t have to be Google. You would add them as resources in your project and then drag them into the theme studio, where you set up the fonts. The fonts you provide need to be in WOFF2 format.
