It seems to be good and standard practice to warehouse images. Based on several comments here I am doing this on Cloudinary.
How does or does it effect SEO? For example, should information be added here for each pic?
From a search engine side, probably the only thing that will get looked at(on your site) would be the image file name, and the html alt tag. If you display the caption on your site, then it would be read be the search images as well.

Yes, and adding to what @teefers said - structure the (alt) description for “blind screen readers” - the “alt” description will be read to them, so make sure it is specific, descriptive, and makes sense as a sentence.
