The problem with “500” errors, is that they’re very hard to troubleshoot unless you have full access to the server. This is generally limited when you host your website on a hoster’s server.
My advise would be to contact your hosting party, and send Google’s full error report to them (including all the links, and the error code that goes with each link). Hopefully, they can see a pattern.
it could be something simple, as the server not parsing the pages in time for Google to index them, or it could be a configuration that needs to be adjusted (by your hoster).
The fact alone that you answered and asked which Server error code, made me investigate further and I agree with you, some kind of ”server side issue.”
