I have been working on setting up a site with Cart CMS. Is there a way of removing the shipping from the bill? We do not have shipping on the site.

Yes - just add 0 for hiding shipping (it mentions this in the manual)
And have shipping switched off in your PayPal account will also work and not show a shipping address or amount.
