Using categories and tags in Rapid Cart Pro

I am using Rapid Cart pro for the first time and have about 130 items to catalogue, so I am wary of making any errors that would have me re-do this tedious data entry. The RCP manual says that the resulting catalogue will be published on multiple pages based on the ‘category’ and ‘tag’ fields, but it does not say which field will be used to allocate products to a page. As a result, I have 2 questions;

  1. Is the ‘category’ or ‘tag’ field used to define which page a product will be allocated to?

  2. Is it possible to see this process live without actually publishing the whole project?
